Calamari au gratin with Lemon
Tasty and easy to make, not fried yet crunchy, calamari au gratin is a delicious compromise between tastiness and healthiness
1 bunch parsley
2 cloves garlic
extra virgin olive oil
3 tbsp of lemon juice
Rinse the squid under running water and cut into rings. Prepare the marinade with the olive oil, finely chopped garlic, lemon juice and a pinch of salt and pepper. Pour the marinade over the squid and leave for at least 1 hour.
Heat the oven to 200 degrees Celsius, place the calamari rings on a baking pan lined with greaseproof oven paper, trying to keep them from touching, sprinkle with breadcrumbs and cook at 200° (convection oven) for about 20 minutes, until golden. Serve hot with a sprinkle of freshly chopped parsley.
