Carnival Fritters

Ingredients:

 

450g flour

150g sugar

200ml milk

3 eggs

1 packet vanilla baking powder

zest of one lemon

icing sugar

peanut oil

salt

 

Method:

 

In a bowl whip the eggs with the sugar until peaks form.

Add the lemon zest, a pinch of salt, the milk and fold in (you can also add a drop of aniseed liqueur or rum).

Sift together the flour and baking powder and fold into the mixture. The mixture is ready. Leave to rest, covered, for half an hour.

Heat the oil, shape the dough into balls and drop in. The fritters are ready as soon as they turn golden.

Serve warm, dusted in plenty of icing sugar.

 

Serves 6.
